The exceptional release power of the Carlex series is based on crystallization technology. Small vegetable wax crystals are evenly distributed in the oil. This gives Carlex a release power ideal for baking applications in trays, tins and oven belts. Carlex does not contain water, which also makes it very suitable for processing dough and dough through the freezer or the dough retarder. Carlex series oils are easy to process and have a low polymerization tendency.
